New Yorkers’ fast-paced lifestyle, combined with the convenience and affordability of ultra-processed food, has increased its consumption. The ‘Food for Thought’ initiative addresses this issue with a three-pronged approach, encouraging residents to reevaluate their relationship with food. At its core is an interactive education centre with city-wide pop-up locations promoting healthier choices through sensory activities, storytelling and AR/VR experiences. The initiative also partners with vertical farms to provide subsidized, locally-grown produce to low-income communities, supported by government incentives. Additionally, HYLIGHT scanning technology optimizes farm productivity by monitoring crop health – nutrient levels, water stress, and disease – supported by a shared best practices database. ‘Food for Thought’ aligns with the United Nations Sustainable Development Goal #12, addresses barriers to healthy eating, and offers a scalable model for sustainable change in urban food systems nationwide.
